Rice Salad - cooking recipe

Ingredients
    1 c. rice, cooked
    2 Tbsp. thin green pepper strips
    1 tomato, peeled and seeded
    2 scallions
    6 Tbsp. oil, seasoned with 1/2 clove garlic
    2 Tbsp. vinegar
    1 tsp. salt
    pepper
Preparation
    Cook rice and then spread on a casserole dish.
    Cook rice in a 200\u00b0 oven for 5 minutes.
    Cool this in refrigerator.
    Boil pepper strips for 1 minute.
    Rinse with cold water.
    Add peppers, scallions and tomato to cooled rice.
    Mix oil, vinegar, garlic, salt and pepper.
    Toss with rice.
    Refrigerate until time to serve.
