Scalloped Eggplant - cooking recipe

Ingredients
    1 large eggplant
    1 can mushroom soup
    1 c. bread crumbs
    1 tsp. sugar
    3 Tbsp. grated cheese
    2 Tbsp. butter
Preparation
    Cube eggplant; soak in salt water, drain and drop in boiling water.
    Cook until tender.
    Arrange in layers in buttered baking dish. Dot with butter and pour soup over top.
    Sprinkle with bread crumbs, sugar and cheese.
    Bake in moderate oven for 30 minutes.
