Ingredients

4 c. warm water
1 oz. active dry yeast
2 lb. 2 oz. bread flour
1 oz. salt
Preparation

Combine water and yeast in a mixer bowl.
Add the remaining ingredients and mix on low speed with a dough hook until all of the flour is incorporated.
Increase to second speed and knead the dough until it is smooth and elastic.
Let the dough rise until doubled.
Punch down, divide and shape as desired.
Let rise again until doubled.
