Taquitos De Pobre - cooking recipe

Ingredients
    5 potatoes
    1/2 c. margarine or butter
    salt to taste
    2 doz. corn tortillas
    1/2 cabbage, thinly shredded
    mayonnaise
    Parmesan cheese (optional)
Preparation
    Peel, cut up potatoes and boil (as in making mashed potatoes, using a little less water).
    When soft, drain water; add margarine and salt to taste.
    Smash until fluffy.
    Warm corn tortillas; add 1 tablespoon potatoes and roll into taquitos.
    Fry in oil until desired crispness.
    Spread a thin layer of mayonnaise and top with cabbage and Parmesan cheese.
    Delicious!
