Sweet Potato Vichyssoise(Serves 4 To 6) - cooking recipe

Ingredients
    2 c. Vidalia onions or leeks, thinly sliced
    2 c. raw sweet potatoes, peeled, thinly sliced
    4 Tbsp. butter
    4 1/2 c. chicken stock
    1 c. heavy cream
    1/4 c. dry sherry
    1 tsp. salt
Preparation
    Saute onions in butter.
    Add potatoes and stock.
    Simmer, partially covered, about 30 minutes.
    Puree soup and add cream, sherry and salt.
    Chill.
