Zesty Pumpkin Soup - cooking recipe

Ingredients
    1/4 c. butter
    1 c. chopped onion
    1 garlic clove, chopped
    1 tsp. curry powder
    1/2 tsp. salt
    1/8 to 1/4 tsp. ground coriander
    1/8 tsp. ground red pepper
    3 c. chicken broth
    1 (16 oz.) can pumpkin
    1 c. half and half
    1 lb. mushrooms, sliced (optional)
    sour cream and chives (for garnish)
Preparation
    In a large saucepan, melt butter.
    Saute onion and garlic until soft.
    Add curry powder, salt, coriander, red pepper and mushrooms, if desired.
    Cook 1 minute.
    Add broth and boil gently for 15 to 20 minutes or until mushrooms are soft.
    Stir in pumpkin and half and half.
    Cook 5 minutes.
    Pour into blender or food processor and blend until creamy.
    Decorate warm, topping with sour cream and chives.
    May be kept covered and chilled overnight, bringing to room temperature before reheating.
