Green Plantain Fritters (Fritos Verdes - Tostones) - cooking recipe

Ingredients
    3 large green plantains
    2 tsp. salt or to taste
    3 c. cold water
    vegetable oil
Preparation
    Peel and slice the plantains into 1-inch diagonal pieces.
    Mix the water with the salt and soak the slices in the refrigerator for 30 minutes (optional).
    Fry on both sides in medium-hot oil until they turn slightly bright yellow color.
    Remove the slices from the pan and place in paper towels.
    Press slices with Tostonera or small plate or the bottom of a heavy jar.
    Fry the pressed slices again until they turn a light golden color and are crispy.
    Serve immediately.
