Salmon Squares - cooking recipe

Ingredients
    4 Tbsp. Crisco
    4 Tbsp. flour
    1 tsp. salt
    1/2 tsp. pepper
    1 c. milk
    1 1/2 c. cracker crumbs, divided
    1 Tbsp. lemon juice
    1 egg
    2 tsp. water
    1 egg
    1 can salmon
    1/2 tsp. onion juice
    Crisco for frying
Preparation
    Make white sauce, blending melted Crisco, flour, salt, pepper and milk.
    Cook until thick; cool.
    Add 1 egg, 1 cup cracker crumbs, salmon, onion and lemon juice.
    Mix well; pack into loaf pan.
    Chill.
    Cut slices from loaf.
    dip in remaining crumbs (you may need a little more cracker crumbs), then 1 egg, beaten with 2 teaspoons water, and again in crumbs.
    Fry in Crisco until lightly or nicely browned on all sides.
