Skinny Cheese Pie - cooking recipe

Ingredients
    1 pkg. unflavored gelatin
    1/8 c. water
    1/2 c. boiling water
    1/3 c. Alba (dry milk powder)
    2/3 c. Ricotta or cottage cheese
    1/4 c. sugar twin or 3 pkg. sweetener
    1/2 tsp. lemon extract
    5 to 6 ice cubes
    1/2 c. chilled pineapple, sugarless
Preparation
    Soften gelatin in cold water; add boiling water.
    Stir in blender a few seconds; add Alba and cheese; stir.
    Add sweetener and extract; blend together.
    Add 5 to 6 ice cubes one at a time at high speed.
    Pour into pie pan and freeze 5 minutes.
    Spread with chilled, crushed, sugarless pineapple.
