Diabetic Cake - cooking recipe

Ingredients
    2 c. water
    2 c. raisins
    1 c. unsweetened applesauce
    1/2 tsp. nutmeg
    1/2 tsp. vanilla
    2 eggs
    2 Tbsp. liquid sweetener
    3/4 c. cooking oil
    2 c. flour
    1 1/2 tsp. cinnamon
Preparation
    Cook raisins in small amount of water until water evaporates. Add applesauce, eggs, sweetener and cooking oil; mix well. Blend flour, cinnamon, nutmeg and vanilla; mix well. Pour into greased 8 x 8-inch pan. Bake in preheated oven at 350\u00b0 for about 25 minutes or until done.
