Shrimp Salad Special - cooking recipe

Ingredients
    1 c. water
    1 stalk celery with leaves, chopped
    2 Tbsp. salt
    2 Tbsp. vinegar
    2 Tbsp. mixed pickling spices or shrimp spice
    1 sprig parsley
    1 bay leaf
    salt to taste
    1 1/2 lb. uncooked fresh or frozen shrimp, peeled and deveined
    1/4 c. tarragon vinegar
    1 c. celery
    3 hard-boiled eggs, cut in eighths
    1/4 c. mayonnaise
    1 Tbsp. chopped onion
    1 Tbsp. drained capers
Preparation
    Combine the first 8 ingredients; bring to a boil.
    Add shrimp; cover and bring to boil.
    Lower heat; simmer gently until shrimp turn pink (about 5 minutes).
    Drain.
    Add tarragon vinegar; let stand about 1/2 hour.
    Drain thoroughly.
    Add remaining ingredients; toss lightly.
    Chill well.
    Serve in lettuce cups; top with mayonnaise.
    Makes 6 to 8 servings.
