Arroz Con Pollo - cooking recipe

Ingredients
    1 1/2 lb. boneless chicken breasts, skinned and all visible fat removed
    1 Tbsp. margarine
    1/4 tsp. black pepper
    1/4 c. chopped onion
    1 Tbsp. vegetable oil
    2 c. low sodium chicken broth
    1/8 tsp. saffron or turmeric
    1/2 c. cooked green peas
    2 cloves garlic, minced
    1/4 tsp. paprika
    1/4 c. chopped green pepper
    1 c. uncooked rice
    1/2 c. chopped fresh tomatoes
Preparation
    Preheat oven to 350\u00b0.
    Rinse chicken and pat dry.
    Set aside. In small saucepan over medium heat, melt magarine.
    Add garlic, black pepper and paprika.
    Mix well.
    Remove from heat and brush on chicken breasts.
    Place chicken in an ovenproof dish and bake, uncovered, 20 to 25 minutes or until meat has turned white throughout.
