Fluffy Potato Bake(A Tangy Version Of Mashed Potatoes) - cooking recipe

Ingredients
    3 lb. potatoes (6 large)
    1/4 c. finely chopped onion
    1/4 c. margarine or butter
    1 (12 oz.) carton small curd cream-style cottage cheese (1 1/2 c.)
    1/4 c. snipped parsley
    1 tsp. salt
    margarine or butter, melted (optional)
Preparation
    Cook, peel and mash potatoes.
    In saucepan, cook onion in 1/4 cup margarine until tender, but not brown.
    Stir onion, cottage cheese, parsley and salt into mashed potatoes.
    Spoon potato mixture into a well-greased 2-quart casserole dish.
    Drizzle melted margarine over top, if desired.
