Ingredients

1 large lemon
2/3 c. olive or salad oil
2 tsp. sugar
1 tsp. salt
1 tsp. dry mustard
1 tsp. fresh or frozen chopped chives
1/4 tsp. cracked pepper
Preparation

Grate 2 teaspoons peel from lemon; squeeze juice from lemon to make 1/4 cup.
In a small bowl, with wire whisk or fork, mix lemon peel, lemon juice, olive oil and remaining ingredients.
Pour dressing over salad greens (spinach, Boston lettuce, Belgian endives) and sliced mushrooms.
Gently toss to mix well.
