Heirloom Relish - cooking recipe
Ingredients

8 c. peeled, ground cucumbers
3 c. ground onions
5 c. ground cabbage
1 c. ground green peppers
1 c. ground red peppers
1 qt. water
2 Tbsp. salt
3 1/2 c. cider vinegar
2 c. sugar
1 Tbsp. mustard seed
1 Tbsp. celery seed
1/2 c. sifted flour
2 Tbsp. dry mustard
1/2 tsp. turmeric
Preparation

Combine first 7 ingredients; let stand overnight.
Drain well; discard brine.
In a 6-quart pan, combine vegetables, vinegar, sugar, mustard and celery seed; simmer 30 minutes.
Combine flour, dry mustard and turmeric, add to relish and cook 10 minutes.
Pack in hot, sterilized jars; process in hot water bath for 10 minutes.
Makes 7 1/2 pints.
