Ingredients

4 medium potatoes
1/2 onion
2 eggs
3 Tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1/4 c. salad oil
Preparation

Pare and coarsely grate potatoes and onion.
Rinse and use paper towels to pat dry.
Mix with eggs.
Sprinkle flour, salt and pepper over mixture and mix well.
Heat oil in large skillet, drop potato batter by heaping tablespoonfuls into skillet and form pancakes.
Saute until golden brown on both sides.
Serve with applesauce and sour cream.
