Banana Nut Muffins - cooking recipe

2 1/4 cups flour
2/3 cup honey-crunch wheat germ
1/4 tsp. baking soda
1/2 cup uncooked rolled oats, finely ground
1/2 cup packed brown sugar
1 Tbsp. baking powder
1/2 tsp. salt
1/2 stick margarine, softened
1/2 cup egg substitute
1/3 cup walnuts, chopped
1 tsp. vanilla extract
2 ripe bananas, mashed
3/4 cup Vanilla Glucerna Shake
Preparation

Preheat oven to 350 degrees.
In a large bowl, mix flour, wheat germ, baking soda, rolled oats, brown sugar, baking powder and salt with pastry blender.
Cut in margarine until mixture resembles coarse crumbs.
Stir in egg substitute, walnuts, vanilla extract, bananas and Glucerna Shake until flour mixture is moistened.
Line 15 muffin cups with paper liners.
Fill almost to the top with batter.
Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
