Cream Of Onion Soup - cooking recipe

Ingredients
    1/4 c. butter
    3 c. onions, finely chopped
    2 ribs celery, finely chopped
    3 3/4 c. chicken stock
    1/8 tsp. mace or nutmeg
    1 bay leaf
    salt and pepper to taste
    1/4 c. flour
    2/3 c. milk
    2/3 c. heavy cream
Preparation
    Saute first 3 ingredients until tender.
    Add chicken stock, mace or nutmeg, bay leaf, salt and pepper.
    Simmer for 45 minutes. Put soup mixture into blender for a smoother soup.
    Return to pan. In a small jar with a lid, place flour and milk.
    Shake until mixed.
    Pour into soup mixture, stirring until soup is thickened slightly.
    Slowly add heavy cream.
    Heat through and serve with croutons floated on top.
    Serves 4 to 6.
