Mexican Barbecue Gator - cooking recipe

Ingredients
    1 qt. gator meat, presoaked and diced small
    1/2 c. cooking oil
    salt and pepper to taste
    1 onion, chopped
    1 green scallion, chopped
    2 cloves garlic, finely minced
    1 pt. stewed tomatoes or 1 qt. fresh tomatoes
Preparation
    Salt and pepper meat.
    Work oil into meat and fry in hot skillet until done.
    Drain off oil; add onion, scallion, garlic and saute until vegetables have cooked down, then add tomatoes. Cook until all liquid has evaporated and sauce has formed.
    Serve on buns or on flour tortillas.
