Low-Fat Apricot Muffins - cooking recipe

Ingredients
    1 c. boiling water
    1 1/2 c. dried cut up apricots
    2 c. flour
    1 c. whole wheat flour
    1 c. sugar
    1 Tbsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    2 eggs, beaten, or 1/2 c. egg substitute
    1/4 c. oil or melted oleo
    1 c. orange juice
Preparation
    Pour boiling water over apricot pieces; let set.
    Meanwhile, sift the dry ingredients together.
    Stir together the eggs, oil and juice.
    Mix together the wet and dry ingredients alternately to just moisten.
    Place in paper cups in muffin pan.
    Bake for 20 to 25 minutes at 375\u00b0.
