Creamy Rice Pudding(No Baking) - cooking recipe

Ingredients
    1/2 c. regular rice
    1 c. water
    4 1/4 c. milk
    1/4 c. raisins
    1/2 c. plus 1 Tbsp. sugar
    1/8 tsp. salt
    3 egg yolks
    2 tsp. vanilla
    1 Tbsp. butter
    nutmeg
Preparation
    Combine rice and water.
    Cook on medium heat for 10 minutes. Add 4 cups milk, raisins, sugar and salt.
    Cook slowly for about 25 minutes.
    Stir frequently.
    When rice is very tender, add egg yolks mixed with remaining 1/4 cup milk.
    Stir constantly.
    Stir until slightly thick and mixture coats spoon.
    Remove from heat. Add vanilla and butter; cool.
    Dust with nutmeg when serving. Makes lots.
    Serves 4 to 6.
