Healthy Carrot Bread - cooking recipe

1 1/2 c. unsifted all-purpose flour
1/2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
2 eggs
6 Tbsp. vegetable oil
1 tsp. vanilla
1 1/4 c. grated carrot
1/2 c. walnuts, chopped
1/3 c. raisins
pecan halves (optional)
Preparation

Preheat oven to 350\u00b0.
Grease 8 1/2 x 4 1/2 x 2 5/8-inch loaf pan.
Stir together flour, sugar, baking powder, soda, cinnamon, salt, nutmeg and cloves in small bowl to mix well.
Beat eggs in large bowl until well blended.
Add oil, vanilla and carrots; beat until well blended.
Fold in walnuts and raisins.
Turn into prepared pan.
Place a row of pecan halves down top center.
Bake in preheated oven for 45 minutes.
Cool bread in pan 10 minutes. Turn out onto wire rack to cool to room temperature.
This loaf slices better if stored overnight.
