Sweet Potato Surprise - cooking recipe

Ingredients
    1 (1 lb. 1 oz.) can whole sweet potatoes
    1 1/2 c. brown sugar
    1/4 tsp. salt
    1 1/2 Tbsp. cornstarch
    1/8 tsp. cinnamon
    1 tsp. grated orange peel
    1 (1 lb. or 2 c.) can apricot halves
    2 Tbsp. butter or margarine
    1/2 c. pecan halves
    1 c. apricot syrup
Preparation
    Place sweet potatoes, halved lengthwise, in greased 10 x 6 x 1 1/2-inch baking dish.
    In saucepan, combine brown sugar, cornstarch, salt, cinnamon and orange peel.
    Drain apricots; reserve syrup.
    Stir 1 cup apricot syrup into cornstarch mixture. Cook and stir over medium heat until boiling.
    Boil 2 minutes. Add butter.
    Add apricots and pecan halves over sweet potatoes. Pour syrup mixture over all and bake in 375\u00b0 oven, uncovered, for 25 minutes.
    Serves 6.
