Zucchini Casserole - cooking recipe
Ingredients

1 Tbsp. plus 1 Tbsp. olive oil, divided
4 oz. Monterey Jack cheese, shredded
1 c. mushrooms, sliced thin
1/2 tsp. basil
4 eggs
1/2 c. chopped onion
2 garlic cloves
2 c. zucchini, sliced thin
1/2 c. dried red bell pepper
1/4 tsp. salt and pepper
Preparation

Preheat oven to 400\u00b0.
Grease 8 x 8 x 2-inch baking dish with olive oil.
Saute onions and garlic in olive oil until clear.
Add zucchini, mushrooms, red pepper and seasonings until tender.
Beat eggs in separate large bowl; add cheese and sauteed vegetables. Pour into baking dish and bake for approximately 25 minutes or until knife comes out clean.
