Marinated Carrots - cooking recipe

Ingredients
    1 large pkg. or bunch carrots, washed and cleaned
    1/3 c. oil
    1 tsp. Creole mustard
    1/3 c. sugar
    1/3 c. vinegar
    1 chopped onion
    1 chopped bell pepper
Preparation
    Cook carrots in water until just tender; drain.
    Add remaining ingredients and bring to a boil.
    Remove from heat; cool and refrigerate.
    Will keep for a long time.
    The longer the better. Serve hot or cold.
