Great Grandma Bennett'S Pork And Sauerkraut Casserole - cooking recipe

Ingredients
    1 c. carrots
    1/2 c. celery
    1/2 c. onions
    1 (4 oz.) jar mushrooms
    2 Tbsp. butter
    2 lb. bulk pork sausage, cooked and drained
    3 1/4 c. drained sauerkraut
    4 c. sliced green apples
    1 c. sour cream
    1/2 c. chopped parsley
    2 tsp. salt
    1/4 tsp. pepper
    8 c. mashed potatoes
Preparation
    In a large skillet, saute carrots, celery, onions and mushrooms in butter until tender.
    Set aside.
    Add sausage, sauerkraut and apples to skillet mixture and mix well.
    Combine sour cream, parsley, salt and pepper with rest.
    Pour into a deep baking dish.
    Cover with
    8 cups mashed potatoes.
    Bake at 350\u00b0 for 40 minutes or until the potatoes are browned.
