Sweet And Sour Chicken - cooking recipe

Ingredients
    4 boneless chicken breasts
    1/4 tsp. salt
    1/8 tsp. pepper
    2/3 c. flour
    1/3 c. cider vinegar
    3 Tbsp. ketchup
    6 Tbsp. dark brown sugar
    1 Tbsp. cornstarch
    2 1/2 Tbsp. vegetable oil
    1 c. diced green peppers
    1/2 c. sliced carrots
    1/2 c. sliced onions
    1 c. drained, canned pineapple chunks
Preparation
    Sprinkle chicken with salt, pepper and flour.
    In a small bowl, mix vinegar, ketchup, brown sugar and cornstarch.
    In a large skillet, heat the oil over medium-high heat.
    Cook chicken until golden brown.
    Remove from pan and cover with foil when done.
    Increase heat to high.
    At this point, add a little oil, if necessary, and cook vegetables until crisp-tender, approximately 1 minute.
    Add the vinegar mixture and bring to a boil, stirring until thickened.
    Stir in pineapple.
    Serve spooned over the top of warmed chicken breasts.
