Sweet Potato Pudding - cooking recipe

Ingredients
    3 medium red, sweet potatoes
    1/2 stick butter or margarine
    1 c. brown sugar
    1 can Eagle Brand condensed milk
    1/2 to 1 tsp. vanilla
    2 eggs, well-beaten
    1 c. miniature marshmallows
    1/4 c. orange juice
    small can crushed pineapple
    pecans, or other nuts
Preparation
    Peel and cut potatoes. Boil until tender, about one hour. Drain and mash. Add butter, sugar, and milk; stir. Add vanilla and eggs; stir. Add pineapple, orange juice and marshmallows. Stir. Add nuts, if desired. Bake about one hour at 350\u00b0 or until top looks dry. Serves 4-6.
