Ingredients

1 c water
1 c sugar
2 cinnamon sticks
1 c cider vinegar or red wine vinegar
3/4 t whole allspice
3 small can whole beets, drained
Preparation

In dutch oven or crock pot mix all ingredients except beets, bring to boil and simmer 15 minutes uncovered.
Add beets to hot liquid.
Cover and let cool.
Refrigerate stirring once a day for 4-5 days.
Serve cold, store in refrigerator.
Be careful-this mixture will stain.
