Asparagus Vinaigrette - cooking recipe

Ingredients
    1 lb. fresh asparagus
    1/3 c. tarragon wine or white wine vinegar
    1 Tbsp. lemon juice
    1 Tbsp. chopped green onions
    1 clove garlic, pressed
    1/2 tsp. dried tarragon, crushed
    1/2 tsp. Dijon mustard
    1/8 tsp. salt
    lemon rind rings (garnish)
Preparation
    Snap off tough ends of asparagus.
    Remove scales with a vegetable peeler or knife, if desired.
    Cook asparagus, covered, in boiling water 5 minutes.
    Drain and place in a shallow dish. Combine vinegar and next 6 ingredients; pour over asparagus. Cover and chill 8 hours.
    Remove from marinade and, if desired, serve in \"bundles\" in lemon rind rings.
    Yield:
    4 servings.
