Eggless Sweet Potato Pie - cooking recipe

3/4 c. butter, softened
3/4 c. sugar
1/3 c. milk
1 1/2 c. cooked, mashed sweet potatoes
2 Tbsp. grated orange rind
3/4 tsp. ginger
1 unbaked 9-inch pie shell
Cool Whip
Preparation

Cream the butter and sugar in mixer bowl until light and fluffy.
Add milk and sweet potatoes alternately, beating well after each addition.
Beat in orange rind and ginger.
Pour into pie shell. Bake at 300\u00b0 for 45 minutes or until filling is set and pie is golden brown.
Serve warm with whipped cream.
Yields 8 servings.
