Wild Duck Jambalaya - cooking recipe
Ingredients

2 duck, cut in pieces
1 lb. pure pork smoked homemade sausage
4 Tbsp. olive oil
2 Tbsp. butter
3 medium onions, chopped
1 tsp. garlic powder
1 tsp. onion powder
3 sprigs parsley, chopped
2 cans Ro-Tel tomatoes
6 c. chicken stock
1 tsp. thyme
2 c. raw rice
2 bay leaves
1 1/2 bell peppers, chopped
1 stalk celery
4 stalks green onions, chopped
salt, pepper and red pepper
1 tsp. basil
Preparation

Brown duck and sausages in melted butter and olive oil.
Add onions, bell peppers and garlic.
Saute for 2 minutes, stirring continuously.
Add all ingredients, except rice and simmer for 45 minutes, stirring often.
Check duck for tenderness.
Add rice and more chicken stock, if necessary.
Cover and place in lowest heat level and cook for 15 minutes or until rice is nice and fluffy.
