Corn Bread Muffins - cooking recipe
Ingredients

1 c. corn meal
1 c. bread flour
2 Tbsp. sugar
1 1/4 c. milk
1 tsp. salt
1 tsp. baking powder
2 Tbsp. melted butter or fat
2 well beaten eggs
Preparation

Sift dry ingredients.
Beat in separate bowl the milk, shortening and egg; add to dry ingredients.
Beat lightly until thoroughly mixed.
Partly fill hot muffin tins.
Bake in quick oven (450\u00b0) for 15 to 20 minutes.
Yields 2 1/2 dozen small muffins.
