Mandarin Orange Salad - cooking recipe
Ingredients

1/2 c. slivered almonds (may substitute cashews)
3 Tbsp. sugar
1 medium head lettuce, torn up
1 bunch spinach, torn up
2 c. chopped celery
4 green onions with tops, chopped
2 Tbsp. snipped parsley
2 (11 oz.) cans mandarin oranges, drained
Preparation

Toast or caramelize almonds (cook almonds and sugar over low heat stirring constantly until sugar melts and coats almonds). Pour almonds onto waxed paper to cook, break into pieces before adding to salad.
You can use cashews instead of almonds and then you don't have to coat them with sugar.
Toss lettuce, spinach, celery, onions and parsley together; refrigerate.
Just before serving, add oranges and nuts.
Toss lightly with dressing. Serves 8.
