Corn And Rice Especiale - cooking recipe

Ingredients
    3/4 c. regular rice
    1/2 c. chopped green pepper
    3 Tbsp. green onion, sliced
    3 Tbsp. butter or margarine
    2 (17 oz.) cans cream style corn
    1 (17 oz.) can whole kernel corn
    4 beaten eggs
    1/2 c. milk
    1 tsp. salt
    1 c. coarsely crushed cheese crackers
    paprika
Preparation
    Cook rice according to package direction.
    Cook green pepper and onion in butter until tender but not brown; stir into rice with corn, eggs, milk and salt.
    Turn into 12 x 7 1/2 x 2-inch baking dish.
    Bake covered at 375\u00b0 until knife inserted in center comes out clean, 40 to 45 minutes.
    Sprinkle cracker crumbs and paprika around edge.
    Bake uncovered about 5 minutes longer.
    Makes 10 to 12 servings.
