Mile High Hot Cakes - cooking recipe
Ingredients

2 eggs
1 c. plain yogurt or sour cream or cottage cheese
1 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 Tbsp. honey or maple syrup or sugar
2 Tbsp. milk
Preparation

Separate eggs.
Beat egg whites until stiff and put in refrigerator.
In second bowl, beat egg yolks and yogurt well. Sift flour, salt and baking soda; add to egg yolk and yogurt mixture.
Stir in milk and honey.
Carefully fold in egg whites. Cook on hot griddle, flipping when batter bubbles.
Yields 12 medium pancakes, thick and cake-like.
