Celebration Spaghetti - cooking recipe
Ingredients

1 Tbsp. olive oil
2 medium zucchini, sliced
1 c. pitted ripe olives, sliced
1 (28 oz.) can tomatoes, chopped
2 (6 oz.) cans tomato paste
1/4 c. Parmesan cheese, grated
1 tsp. salt
1/2 tsp. sweet basil leaves
1/4 tsp. butter
1 (1 lb.) Creamettes spaghetti
2 Tbsp. softened butter or margarine
2 Tbsp. Parmesan cheese, grated
1/2 c. mushrooms, sliced
1/4 tsp. pepper
Preparation

In a large skillet, heat oil.
Saute zucchini, mushrooms and olives.
Add tomatoes, tomato paste, Parmesan cheese, salt, basil and pepper.
Simmer 15 minutes.
Prepare spaghetti.
Drain.
Toss with softened butter.
Arrange on warm platter.
Pour on sauce and top with grated Parmesan cheese.
Makes 8 to 10 servings.
