Lemon Jello Cake - cooking recipe

Ingredients
    3/4 c. pineapple juice
    3/4 c. applesauce
    8 egg whites
    1 pkg. reduced fat yellow cake mix
    1 small pkg. lemon Jell-O (optional, with or without NutraSweet)
    2 tsp. grated lemon rind
    1/2 c. lemon juice (3 lemons)
    1 1/4 c. powdered sugar
Preparation
    Preheat oven to 350\u00b0.
    Coat an 8 1/2 x 11-inch pan with canola oil spray.
    Mix applesauce and egg whites in a large bowl.
    Stir in yellow cake mix, Jell-O and lemon rind.
    Slowly drizzle in pineapple juice.
    Using a mixer, beat for 5 minutes. Pour into prepared pan.
    Bake approximately 35 minutes or until done.
