Pepper Relish - cooking recipe

Ingredients
    16 green tomatoes, finely chopped
    12 ripe tomatoes, finely chopped
    12 green bell peppers, finely chopped
    9 red bell peppers, finely chopped
    3 c. sugar
    5 c. vinegar
Preparation
    Combine green tomatoes, ripe tomatoes, green peppers, red peppers, sugar and vinegar in large saucepan; mix well.
    Simmer for 45 minutes, stirring frequently.
    Ladle into hot sterilized jars, leaving 1/2-inch headspace; seal with 2-piece lids.
    Process in boiling water bath for 10 minutes.
    May add chopped onion if desired.
    Yield:
    48 servings.
