Ingredients

1/2 c. sliced fresh mushrooms
1/4 c. chopped onion
1/4 c. water
3 Tbsp. sodium-free tomato paste
1/2 tsp. dried basil, crushed
1/2 tsp. dried oregano, crushed
1/4 tsp. sugar
1/4 tsp. fennel seed
1/8 tsp. crushed red pepper
1 clove garlic, minced
nonstick cooking spray
8 oz. red snapper fillets
4 green pepper rings
1/2 c. shredded no-fat Mozzarella cheese (2 oz.)
Preparation

For sauce, in a small saucepan, combine half of the mushrooms, onion, water, tomato paste, basil, oregano, sugar, fennel seed, red pepper and garlic.
Bring to boiling, then reduce heat. Simmer, uncovered, for 4 minutes, stirring the mixture occasionally.
Remove from heat.
