Holiday Potato Casserole - cooking recipe

Ingredients
    3 lb. potatoes, peeled and quartered
    1/2 c. butter or margarine
    2 pkg. (3 oz. each) cream cheese, softened
    1 c. (4 oz.) shredded Cheddar cheese, divided
    1 jar (2 oz.) diced pimientos, drained
    1 small bell pepper, chopped
    1 bunch green onions, chopped
    1/2 c. grated Parmesan cheese
    1/4 c. milk
    1 tsp. salt
Preparation
    Cook potatoes in water 15 minutes until tender; drain and mash.
    Add butter and cream cheese.
    Beat at medium speed on mixer until smooth.
    Stir in 1/2 cup Cheddar and next 6 ingredients.
    Spoon into lightly greased 11 x 7 x 1 1/2 baking dish.
    Cover and chill, if desired.
    Remove casserole from refrigerator and let stand at room temperature 30 minutes.
    Bake at 350\u00b0 40 minutes.
    Sprinkle with remaining Cheddar.
    Bake 5 minutes or until cheese melts.
    May be baked without chilling.
    Baking time may be less than 40 minutes.
