Tropical Chicken Salad - cooking recipe
Ingredients

1/2 c. sour cream
1 c. seedless green grapes, halved
2 c. cooked chicken, diced
4 Tbsp. flaked coconut, toasted
red leaf lettuce leaves
1 tsp. lemon juice
1 (11 oz.) can mandarins, drained
1 c. celery, diced
1/2 c. thinly sliced carrot strips
Preparation

Combine sour cream and lemon juice in a bowl.
Stir in grapes, mandarins, chicken, celery and 2 tablespoons of the coconut. Arrange lettuce leaves on four individual plates, spoon on chicken mixture, garnish with remaining coconut and carrot sticks.
Serves 4.
