Cod A La Spetse - cooking recipe
Ingredients

1 lb. frozen cod fillets
1/3 c. olive or vegetable oil
1/4 c. dry white wine or water
1/2 c. chopped, fresh parsley
3 Tbsp. lemon juice
1 clove garlic, minced or pressed
1/2 tsp. salt
1/4 tsp. black pepper
1 medium tomato, diced
1/2 c. soft bread crumbs
Preparation

Brush 1 tablespoon of oil in the bottom of a shallow baking dish large enough to accommodate the fish in one layer with space in between.
Mix remaining oil with wine, parsley, lemon juice, garlic, salt and pepper.
Sprinkle diced tomato over fish and pour on the oil-wine mixture.
Sprinkle with bread crumbs.
Bake at 350\u00b0 for about 40 minutes or until fish flakes when probed with a fork.
