Apple Pie Filling - cooking recipe

6 lb. Golden Delicious apples
2 c. sugar
1/3 c. flour
1 Tbsp. lemon juice
1 tsp. cinnamon
1/4 tsp. nutmeg
Preparation

Peel, core and slice apples. Put in solution of vinegar and salt to keep from turning brown. Combine sugar, flour, cinnamon and nutmeg. Mix well. Remove apples and rinse well. In large kettle, put apples; sprinkle with flour mixture. Stir carefully. Let stand for 30 minutes. Stir in lemon juice. Cook on medium heat until mixture thickens and registers 212\u00b0 on a candy thermometer (takes about 2 minutes). Stir frequently to prevent sticking. Ladle hot filling into hot jars. Process in hot water bath for 25 minutes or pressure canner at 5 pounds pressure for 8 minutes. Makes 6 quarts. One quart filling makes 1 (8 or 9-inch) pie.
