Lemon Chicken - cooking recipe

Ingredients
    4 skinned, boned chicken breasts
    1 chopped onion
    2 crushed garlic cloves
    1 Tbsp. butter
    1 Tbsp. cornstarch
    1 (13 3/4 oz.) chicken broth
    chopped parsley
    1 large sliced carrot
    2 Tbsp. lemon juice
    1/2 tsp. grated lemon rind
    1/2 tsp. salt
    1 c. snow pea pods
    1 1/2 c. dry Minute rice
Preparation
    Combine chicken breasts, onion, garlic and butter in 2 1/2 quart microwave-safe dish.
    Cover and cook on High 3 to 4 minutes, stirring once.
    Blend cornstarch with broth and add with remaining ingredients to chicken mixture.
    Cover and cook 7 minutes or until thickened.
    Stir twice.
    Fluff with fork.
