"Candied" Sweet Potatoes - cooking recipe

Ingredients
    1/2 c. dried apricots
    1/2 c. dark raisins
    1 c. unsweetened apple juice
    4 medium sweet potatoes, scrubbed and trimmed
    1 Tbsp. tapioca
    1 to 2 Tbsp. brandy (optional)
    1 c. unsweetened applesauce
Preparation
    Preheat oven to 350\u00b0.
    Wash apricots and soak with raisins in apple juice for 1 hour.
    Steam sweet potatoes until tender.
    In a small saucepan, combine tapioca with apricots, raisins and juice. Let mixture stand for 5 minutes.
    Bring to boil over medium heat; stir often.
    Remove from heat.
    Add brandy (optional) and cool for 20 minutes.
    Cut cooked sweet potatoes into 1/2-inch slices.
    Mix with applesauce.
    Place this mixture in a 1 1/2-quart dish.
    Pour the apricot-raisin sauce over the top.
    Bake, uncovered, for 30 minutes.
    Makes 6 servings.
