Quick Hearty Bean Soup - cooking recipe
Ingredients
-
2 cans Bush's Great Northern (white) beans (undrained)
1 can Swanson's clear chicken broth (discard little blob of fat)
2 broth cans cold water
2 ribs celery, thin sliced crosswise
1 large carrot, grated
1 medium to large onion, diced
1 small turnip, diced (optional)
1 large potato, diced
2 large romaine lettuce leaves, stripped from center vein, stacked and cut crosswise into narrow strips
3 or 4 inch pieces turkey Polska sausage, outer tough case peeled and discarded and meat cut crosswise into thin rounds or several slices deli smoked ham stacked and cut into narrow ribbons
pepper to taste
Preparation
-
Put all ingredients into a large soup pot, bring to a boil on high, then reduce heat to a gentle simmer until onion, potato, celery and turnip are done, roughly 35 to 40 minutes.
We do not add salt since other ingredients do very nicely for seasoning. This makes six generous helpings and with the addition of a hot bread and a light dessert makes a meal.
