Zucchini Flats - cooking recipe
Ingredients

3/4 c. grated Parmesan cheese
2 eggs
2 Tbsp. flour
1/4 tsp. pepper
2 cloves garlic, minced or pressed
2 Tbsp. finely chopped parsley
1/4 c. milk
2 large zucchini
1/4 c. oil
Preparation

Beat batter ingredients with wire whip, cover and refrigerate for at least 15 minutes.
Cut zucchini in half crosswise, then in lengthwise slices about 1/4 inch thick.
Dust lightly with flour. In large frying pan, heat oil over medium-high heat.
Dip zucchini slices in batter mixture to coat each side.
Fry until golden brown on both sides.
Drain on paper towels.
Sprinkle with additional Parmesan, if desired, and serve.
Makes 4 to 6 servings.
