Baked Corn - cooking recipe
Ingredients

1/4 c. diced mango pepper
2 Tbsp. shortening
1/2 c. condensed milk
1 1/2 c. whole kernel corn, drained and liquid reserved
1/2 tsp. salt
dash of pepper
1/3 c. cheese (Velveeta or American)
2 eggs, separated
1 1/3 c. soft bread cubes
Preparation

Fry mango in shortening. Add milk, 1/2 cup corn liquid, seasonings and cheese.
Heat until cheese melts. Add slightly beaten egg yolks, bread cubes and corn. Beat egg whites stiff. Fold in.
Pour into greased 1 1/2-quart baking dish. Bake at 350\u00b0 for 45 minutes or until firm in center. Serves 8.
