Carrot-Pineapple Nut Cake - cooking recipe

1 lb. carrots
3 c. sifted flour
3 c. sugar
1 Tbsp. baking soda
1 Tbsp. cinnamon
1 tsp. salt
1 1/2 c. vegetable oil
4 eggs, beaten
1 Tbsp. vanilla
1 1/2 c. chopped walnuts
1 1/2 c. shredded coconut
2 (8 oz.) cans crushed pineapple, drained
Preparation

Cake is very, very moist; a honey sauce similar to baklava syrup is poured over the cake while it is still warm.
Should be cut in small pieces as it is very rich and delicate.
